Meet Anaalā: Iniala Valletta Launches New Thai Rooftop Restaurant

Iniala Valletta has officially opened Anaalā, a new rooftop restaurant offering an authentic Thai dining experience inspired by the country's four distinct culinary regions.

Created in collaboration with internationally renowned chef Ian Kittichai, Anaalā introduces an evolving concept that showcases the flavours, ingredients and traditions of Northern, Northeastern, Central and Southern Thailand.

Instead of a fixed menu, the restaurant features a rotating regional sharing menu, allowing diners to experience a different part of Thailand with every visit.

Chef Kittichai said the concept reflects the way food is traditionally enjoyed in Thailand, where dishes are shared around the table.

He added that the kitchen is committed to using fresh, authentic Thai ingredients, with curry pastes prepared in house and recipes remaining faithful to Thai culinary traditions while incorporating high quality seasonal Maltese produce.

Located on the rooftop above Iniala's new Solis wing, Anaalā combines an intimate dining space with outdoor seating overlooking Valletta.

The restaurant will offer two evening sittings, with later services transforming into a more vibrant adults-only atmosphere featuring an expanded drinks menu and DJ performances on selected evenings.

The menu includes regional specialities ranging from fragrant Northern curries and braised pork dishes to fresh seafood, green curry beef short rib, fried local seabass and a contemporary take on Thailand's popular mango sticky rice dessert.

The drinks programme complements the changing menus with wine pairings, including Maltese wines, Thai-inspired cocktails, local craft beers and traditional refreshments such as Thai iced tea.

By combining authentic Thai cooking with locally sourced ingredients and craftsmanship, Anaalā adds a distinctive new dining destination to Valletta's growing culinary scene, offering guests a fresh way to explore the richness and diversity of Thailand's cuisine.
