FKNK Celebrate Game Meat Week With Various Maltese Game Dishes

The Federation for Hunting, Trapping and Conservation (FKNK), highlighted the significance of Game Meat Week, during which game meat was given special prominence as an integral part of Maltese culture and culinary heritage.

Celebrated annually across Europe, Game Meat Week brings together more than seven million hunters through FACE, the European Federation for Hunting and Conservation, with the aim of promoting the nutritional value, sustainability and quality of game meat.

As a member of FACE for over 37 years, the FKNK coordinates the initiative in Malta in collaboration with the Malta Chefs Society.

Earlier this month, the FKNK organised this year’s local celebration, inviting distinguished guests to experience a diverse range of game dishes.

The menu featured quail, guinea fowl, rabbit and venison, complemented by seasonal winter ingredients such as nuts, dried fruit and Mediterranean herbs.

According to Malta Chefs Society Chief Executive Paulino Schembri, innovative side dishes, including rabbit risotto, were designed to reinterpret traditional Maltese flavours and present them in a contemporary culinary context.

The statement also noted that this year’s celebration coincided with a major international achievement, as the FKNK publication Game Recipes from Malta was awarded the title of world’s best game cookbook at the Gourmand World Cookbook Awards.

FKNK Chief Executive and senior editor Lino Farrugia described the book as the fulfilment of a long-held vision to preserve traditional game recipes that had previously been passed down orally through generations. Developed with a modern approach in collaboration with FKNK president and co-editor Lucas Micallef, the book brings together tradition and innovation.

Featuring recipes by 13 Maltese chefs, alongside historic dishes identified with the assistance of Heritage Malta, the publication reflects the deep-rooted connection between hunting, food and Maltese identity, underscoring the cultural value of game cuisine both locally and internationally.
